These muffins are perfect for school lunchboxes.

Ingredients

  • 250 g plain flour
  • 1 serve of AptaGrow powder (e.g. 7 level scoops of AptaGrow 3+)
  • 25 g cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • Pinch of salt
  • 1/3 cup milk
  • 50 g extra virgin olive oil
  • 2 large eggs
  • 1 tsp vanilla essence
  • 200 g banana, mashed
  • 1/4 cup brown sugar
  • 1 cup grated zucchini, unpeeled
  • 1 cup grated carrot, peeled
  • 160 g chocolate chips

Method

  1. Preheat the oven to 180°C.

  2. Line a muffin tin with paper liners or lightly spray with non-stick cooking spray and set aside.

  3. In a large bowl, whisk together the flour, AptaGrow, cocoa powder, baking soda, baking powder and salt until well combined.

  4. In another bowl, whisk together the oil, milk, eggs, vanilla, banana, and brown sugar until smooth and well combined.

  5. Stir in the grated zucchini and carrot.

  6. Add this mixture to the dry ingredients and stir until just combined.

  7. Fold in the chocolate chips.

  8. Fill the prepared muffin tins until the cups are 3/4 full. Bake for 20-30 minutes, or until a toothpick inserted in the centre of a muffin comes out clean. Leave to cool slightly before serving.
