Nutritious Chicken Sausage Rolls

- 3 sheets puff pastry, thawed
- 500 g chicken mince
- 1/2 onion diced
- 1 carrot peeled and grated
- 1 zucchini unpeeled and grated
- 1/4 cup wholemeal breadcrumbs
- 1 garlic clove crushed
- 1 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 2 large eggs
- 3 serves of AptaGrow powder (e.g. 21 level scoops or 94.5g of AptaGrow 3+)
- Sesame seeds or black poppy seeds to sprinkle
Preheat oven to 200°C and line 3 baking trays with baking paper.
In a large bowl, add the chicken mince, onion, carrot, zucchini, breadcrumbs, garlic, tomato paste, Worcestershire sauce, 1 egg and AptaGrow powder. Mix until well combined.
Cut one sheet of defrosted puff pastry in half and spoon a sixth (1/6) of the mixture lengthways along the centre of each piece. Fold 1 edge of pastry over and tuck it in over the filling, then fold the other side of the pastry to make a roll. Roll the sausage roll over so that the joined pastry is facing down. Repeat with the remaining pastry and filling to make 6 rolls.
Cut each roll into 6 pieces.
Beat 1 egg. Using a pastry brush, lightly brush the rolls with the egg and sprinkle with sesame seeds or poppy seeds.
Bake for 25-30 minutes or until the pastry is golden and puffed and the mixture is cooked through. Serve with your favourite dipping sauce.
