Ingredients
  

  • 250 g plain flour
  • 1 serve of AptaGrow powder (e.g. 7 level scoops of AptaGrow 3+)
  • 25 g cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • Pinch of salt
  • 1/3 cup milk
  • 50 g extra virgin olive oil
  • 2 large eggs
  • 1 tsp vanilla essence
  • 200 g banana, mashed
  • 1/4 cup brown sugar
  • 1 cup grated zucchini, unpeeled
  • 1 cup grated carrot, peeled
  • 160 g chocolate chips

Instructions
 

  • Preheat the oven to180°C.
  • Line a muffin tin with paper liners or lightly spray with non-stick cooking spray and set aside.
  • In a large bowl, whisk together the flour, AptaGrow, cocoa powder, baking soda, baking powder and salt until well combined.
  • In another bowl, whisk together the oil, milk, eggs, vanilla, banana, and brown sugar until smooth and well combined.
  • Stir in the grated zucchini and carrot.
  • Add this mixture to the dry ingredients and stir until just combined.
  • Fold in the chocolate chips.
  • Fill the prepared muffin tins until the cups are 3/4 full. Bake for 20-30 minutes, or until a toothpick inserted in the centre of a muffin comes out clean. Leave to cool slightly before serving.
